Blue Skies Inn Breakfast Philosophy

1. Breakfast should be hot.
Our breakfast arrives right from our oven with a special potholder that advises our guests that it is "HOT!"
2. Breakfast should be individually prepared for our guests.

We cook your breakfast specifically for you and it will always be served so that you can take it anywhere. Our guests have been known to take the entire picnic basket to the Garden of the Gods for a breakfast among the red rocks.
3. Breakfast should be served at several times.
We offer breakfast at 8:30 AM or 9 AM.
4. Breakfast should be served anywhere.
If you are shy or just want to dine alone with your sweetie, we deliver breakfast to your door at no extra charge. If you wish to mingle with other guests, we serve you on one of our covered porches or in The Secret Garden.

5. Breakfast ingredients should be fresh.
Our muffins are baked with fresh blueberries and our fruit bowl will always hold fresh fruit. You will never find a poached, canned pear at Blue Skies Inn.
6. Breakfast should be recognizable.

We will never serve you a breakfast dish that has a mysterious name or requires explanation, leaving you wondering what exactly it is.
7. Breakfast should be plentiful.
Many of our guests claim that they can skip lunch after enjoying our generously sized breakfast. We are happy to serve you as many muffins as you can possibly eat! (Guest record is six.)
8. Breakfast recipes should be shared.
If you fall in love with one of our dishes, we will print the recipe for you to take home.
9. Take-home bags should always be available for your extra muffins.
The current record for farthest-traveled muffins is Hong Kong, compliments of Wayne & Sigi. (We missed having our muffins photographed by a guest on the Great Wall of China because of a canceled flight.) We invite you to send us photos of your muffins and where they travel, and we will post the "farthest traveled" on our website.

Words cannot truly describe the experience we had here at your inn. It is truly an amazing place. The Morning Glory suite is darling! We have been spoiled now by your delicious breakfasts.
Besides your awesome hospitality, the best part of our visit was the beautiful wedding you provided. All aspects were absolutely immaculate. We are so glad to have chosen Blue Skies Inn to celebrate our love. Thank you for sharing it with us.

Green Eggs, No Ham
(serves 2)
Preheat oven to 375 degrees
Use nonstick spray on 8" casserole dish
Mix 4 eggs
Add:
1/2 cup chopped frozen spinach, thawed
Salt and pepper or seasoned salt to taste
1/4 cup milk
1 cup bread cubes
Pour into casserole dish,
top with 1/4 C. grated Swiss cheese
Cook for 30 minutes or until set

Sunny Skies Muffins
(makes 12 muffins)
Preheat oven to 375 degrees
Sift together:
2 1/2 C. flour
1/2 C. sugar
1 T. baking powder
1/2 t. salt
Add:
1 C. canned crushed pineapple
1/4 C. coconut
Mix together very well, then add to dry ingredients:
1 egg
1 C. milk
1/4 C. melted butter or canola oil
Sprinkle tops with sugar
Cook in foil cupcake liners in muffin pan for 25-30 minutes until lightly golden brown.

Walking into the Sunset suite and seeing how beautiful it is assured me that our stay here & our wedding would be a dream come true! Of course, that wasn't the only amazing thing - the first time we looked out the window, there were two deer - WOW! That was so wonderful!
Waking up to a soft knock on the door and finding the basket with the wonderful and delicious breakfast - I just can't explain it. Neither of us had ever experienced anything like this...
Our wedding was AMAZING! It snowed that day, and people all around told us that meant good luck - Everyone around here seemed to go out of their way to make you happy. I married my best friend here, my true love - I know we will be happy all our days. I hope whoever reads this will find just as much joy & happiness as we did!
